The juxtaposition of savory protein and fresh greens elevates sandwiches to other worldly status in my opinion. The decadent Bahn Mi is case in point. I translated this concept for dinner two ways:
Napa cabbage + apples + sweet potatoes = seasonal Sunday dinner. Tonight I played catch-up with some of Capay’s recent produce deliveries. The result was an improvised, colorful menu of light dishes – perfect for a lazy Sunday:
- Salad with Napa cabbage (shredded), diced apples, sliced pecans and poppyseed dressing
- Turkey burgers with apple slices and melted cheddar on sourdough
- Mashed sweet potatoes with butter and honey (same method from Thanksgiving)
I’m shameless when it comes to cheese (more on that, here). I’ve been obsessed with macaroni and cheese for as long as I can remember. So I was pleasantly surprised when my coworker Martha brought me two slabs of Cabot Cheddar from Vermont. Sharp enough for snacking throughout a busy work day! And I’m sure that cheddar will turn into dinner (or at least an appetizer) for David.
