Drugstore Dinner

I’ve officially joined the recession bandwagon. Tonight I made dinner from inexpensive drugstore ingredients. (Confession: There’s a Longs next to the dry cleaners right on our way home, so I happened to stop.) And it wasn’t bad. Come to think of it, there are quite a few recipes I could dream up from semi-perishable ingredients – you just have to watch the salt content!

Tonight’s menu: Tortillas + black beans + salsa + canned olives + sour cream + cheddar cheese

  • Sundried tomatoes + cream cheese + toast = quick party app
  • Black beans + brown rice + sour cream = healthy dinner
  • White beans + roasted bell peppers + toast (or tortillas, toasted) = pretty app
  • Salsa + cream cheese + tortilla chips = best snack ever
  • Pasta + marinara sauce + Kraft parmesan cheese = you know you love it!

Recipe Remix – Pappardelle at Fiamma

I had a delightful pappardelle dish at Fiamma in Las Vegas this weekend, which couldn’t be terribly difficult to recreate at home. (Especially considering our affinity for anything involving pappardelle.)

Fiamma’s menu cites “black truffle crema” and wild mushrooms. I detected freshly ground pepper as well. Here are some possible ingredients and similar recipes from around the Web – stay tuned for the results!

Family Dinner Favorite, Revisited

Hamburger Sour Cream Casserole is somewhat of a legend in the Flynn family. In particular, my sister Julie has declared it her favorite, and for good reason. The combination of tomato sauce, cream cheese, sour cream, and green onions coating egg noodles is completely addictive.

Tonight I made a modified version of the original, based on the ingredients I had picked out by memory – which turned out to be a healthy spin on the original anyway. I used ground turkey instead of beef, skipped the sugar, used whole wheat pasta instead of traditional egg noodles, and substituted half the sour cream for plain yogurt.

Just as delicious as the original! And the recipe makes quite a lot. The hardest part is telling yourself to stop, so you have leftovers. The Cliff Notes version is this: brown the meat; add tomato sauce and simmer; boil pasta separately; combine cream cheese, sour cream and chopped green onions in a bowl; layer all three mixtures into a casserole dish (and bake or let settle to meld the flavors).

Random Bursts of Creativity

This week was a busy one, no surprise, so I had to be a little creative with dinner. Here’s what I came up with in a flash:

Monday night: Sauteed mushrooms + fresh, chopped basil + pappardelle + olive oil + fresh parmesan = photogenic, fresh and healthy pasta (too bad I didn’t snap a pic!)

Tuesday & Wednesday night: Boiled, shredded chicken leftovers + burrito ingredients OR brown rice = easy crowd-pleasers

Thursday night: Leftover shredded chicken + provolone cheese + heirloom tomatoes + sourdough = super speedy chicken clubs

Friday night: Salad + pizza + wine = TGIF!

Foodie 4th Weekend Round-up

We spent a relaxing 4th of July weekend in Bodega Bay, and the only hard work was spent toiling away in the kitchen. Here’s a recap of the decadent (but recession-friendly!) menu – along with some local flavor:

  • Friday night dinner: Johnnie & Melinda made cheeseburgers, barbecued white corn and homemade French fries

  • Saturday morning breakfast: Tim & Laura made lemon-poppy seed waffles with fresh fruit and blueberry compote (topped off by mimosas with real Champagne from France)

  • Saturday afternooon: Cheese and more cheese! We took a hike to the beach, so it balanced out. 😉
  • Saturday night: David & I made tri-tip, mashed potatoes, sauteed vegetables, and Tina made a delicious salad

  • Sunday we stopped at Wild Flour Bakery in Freestone – amazing bread, lattes and apricot scones!
