Crock Pot Pork Stroganoff

So I don’t spend that much time on Pinterest – honestly – because they don’t have an iPad app yet. But… I stumbled on this gem, Pulled Pork Stroganoff, and decided to put both my slow cooker and a pork tenderloin to use.

Here are a couple of adjustments I made:

  • Instead of garlic powder, I used two minced cloves
  • I swapped beef broth for chicken broth
  • I used goat cheese and yogurt in place of cream cheese and sour cream (low lactose and less fat to boot!)
  • For the pasta, I used spaghetti instead of tagliatelle; but if I had a choice, I would have used pappardelle

The results were much more universal than expected. After having stroganoff the first night, David proceed to make a burrito with leftovers, and on the final night I made sandwiches with sauteed bell peppers and cheddar. They were like delicious, gooey Philly cheese steaks. Yum!

Simple Pulled Pork

Sometimes you feel like playing with ingredients and seasoning, and sometimes you don’t. Here’s a pulled pork recipe that’s stripped down, but just as tender.

Bring a pan full of salted water to a boil, add a drizzle of maple syrup if you like. Add pork tenderloin and cook covered until it falls apart with a fork. Then shred meat with two forks and cook on low until you’re ready to eat it. I served mine with rice, and it was simply delicious.

Pulled Pork Enchiladas

One pork tenderloin turned into two great dinners and leftovers for three nights, with the help of @everydayfood and @epicurious. Here’s how it went down.

Monday night I made pulled pork on the stove, using an adapted recipe from Everyday Food, “Lighter Pulled Pork Sandwiches.” I skipped the coleslaw and served the pork on sourdough sandwich rolls.  I served corn on the side. Tuesday night I had leftovers.

Tonight I made enchiladas with the leftover pulled pork, corn and a new sauce taken from Epicurious’ “Garden Vegetable Enchiladas.” I used 1% instead of whole milk, and only 1 tablespoon of chili powder. (The recipe called for 3, wow!)

Everyone loved the new enchiladas, but we’ll always hold a special place in our hearts for Birthday Enchiladas.

Pork and Pancakes

This weekend = three P’s; pulled pork and pancakes, but not in the same meal. For starters, I made pulled pork sandwiches for guests on Saturday night, inspired by Everyday Food‘s “Southern Pulled-Pork Sandwiches” with a few changes. (No cayenne pepper or cider vinegar, so I’d recommend doubling up the water or using apple juice as my sister-in-law suggested.)

Tonight, we had leftover “carnitas” and the meat was still flavorful and tender.

Also, this morning I decided to try fluffing up my Pancrepes recipe by using baking powder, which the original recipe calls for. Turns out we both prefer the thin pancakes! (David had a fried egg with his.)
